Garbanzo Pasta Salad

I modified this recipe from one I found in Self this month. I meant to swap out Cannelini beans for Garbanzo beans, but I didn’t mean to ditch the broccoli for mixed veggies. I just happened to skip right over that item on my grocery list. 😦

The recipe itself is pretty simple.

Drain and rinse a can of organic garbanzo beans:


Boil some whole wheat pasta (I used about half a box):

Grab a tub of feta:

And some EVOO:

Steam some frozen veggies that you thankfully had on hand (unpictured).

And a few containers if you’re portioning out lunches (I made 4):

Strain your pasta and mix it all up!

A delicious, nutrious and fairly clean lunch!
